SALMON and VEGETABLE MUFFINS


I've finally found a way for myself to enjoy salmon! I really hate that I cannot stand salmon fillets, as I know how healthy they are for me. After eating red salmon in a sandwich that a lovely friend's mum made for me a while back, I realised that I didn't mind salmon in a tin! I figure that if I start eating salmon in these muffins I will be able to gradually work my way towards salmon fillets! I eat these with a side salad for a light dinner. You can top the muffins with extra herbs and a dollop of reduced-fat sour cream, if desired. 

INGREDIENTS

  • extra virgin olive oil spray or 2 teaspoons extra virgin olive oil
  • 4 eggs, preferably free-range
  • 1 can (210g) red salmon, drained, flaked & any bones removed
  • 1/4 cup reduced fat cows milk (or if intolerant/allergic to dairy substitute for lactose-free, soy or unsweetened almond milk)
  • 1/4 cup water 
  • 1/2 red or green capsicum, deseed and finely chopped
  • a generous handful of baby spinach, chopped
  • a small handful of dill and / or parsley, finely chopped
  • 30g reduced fat feta, crumbled
  • a generous amount of ground black pepper



COOKING 

1. Preheat a fan forced oven to 180 degrees. Spray or brush all holes of a 12 standard muffin tray. 

2. Whisk the eggs in a medium bowl, then add the salmon, milk, water, capsicum, spinach, herb/s, feta and pepper. Mix well to combine and add more water if the mixture is too thick for your liking. 

3. Pour the salmon & egg mixture into the prepared muffin holes. I like to make big muffins, therefore I usually make around 9 muffins. If you want to make 12 muffins, pour a little less into each muffin hole. 

4. Bake for around 25 minutes or until egg is just set and golden. Remove warm, topped with extra herbs, if desired.

CHICKEN MUFFINS



Such an easy recipe that is tasty hot or cold. Just be careful as these cakes are very moreish and you will end up eating 4-5 per person. Great for a snack at work or for kids for school lunches. Make sure you buy a nice chicken mince and feel free to add whatever herbs you like; chives work nicely as does parsley or basil. 


INGREDIENTS

  • 500g chicken mince (preferably free-range)
  • 1 large garlic clove or 1 spring onion, finely chopped
  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 1 cup baby spinach, washed & drained, roughly chopped
  • 1 egg, lightly beaten (preferably free-range)
  • 2 heaped tablespoons fresh chives, finely chopped
  • 2 heaped tablespoons fresh basil, finely chopped
  • a pinch of ground black pepper
  • rice bran oil for greasing 

COOKING 

1. Preheat a fan-force oven to 180 degrees celsius. Prepare 10 muffin holes (1/2 cup /125ml deep) by lightly greasing with rice bran oil. 

2. Stir all ingredients until well combined. You can even use your hands to really mix the ingredients, just make sure that they are clean! Spoon mixture evenly into prepared muffin holes. 

3. Bake for 25 minutes or until mini cakes are golden and firm. Serve alongside a side salad. 

Makes / 10 / around 2 1/2 per person

POLENTA, PUMPKIN & TURKEY MUFFINS


These muffins are an adaptation of Sarah Wilson's 'Mexican Beef Nacho Muffins' found in her 'I Quit Sugar for Life' cookbook. I wanted to make a savoury turkey muffin equivalent using different spices and ingredients. I also used her Pumpkin Puree recipe which is incorporated below into the muffin recipe. If you have her cookbook or access her website you will see that several of her other recipes call for this prepared pumpkin puree. You could also use the leftover puree in brownies, as a pizza sauce or make it into a very simple mash by adding a few splashes of almond milk. These muffins are delicious for a breakfast on-the-go, a filling snack, or for lunch and/or dinner with a side of vegetables. 

Ingredients

Muffin

  • 1 large pumpkin, deseeded, peeled & cut into small even pieces
  • 3 teaspoons coconut oil, plus extra to grease
  • sea salt & ground black pepper
  • 60g piece of leek, finely chopped
  • 500g lean turkey mince
  • 2 free-range eggs
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground chilli
  • 2 teaspoons dijon mustard
  • 100g sweet potato, peeled & grated
  • 1/2 cup polenta, plus extra to dust 
Topping
  • 1 small avocado
  • 1 tablespoon lime juice

Cooking 

1. Preheat a fan force oven to 200 degrees celsius.  Line a large baking tray with baking paper. 

2. Toss the pumpkin pieces with 2 teaspoons of the coconut oil and a generous pinch of salt & pepper. Place the pumpkin in a single layer on the tray and bake for 20 minutes or until tender but not burnt. 

3. Remove the cooked pumpkin from the oven and mash by hand (or use a blender) to make into a puree. You will need 1/2 cup of puree for this recipe. You can store the remainder (which should equal 2 - 2 1/2 cups) in zip-lock bags or containers in 1/2 cup quantities in the fridge or freezer. 

4. Meanwhile, heat 1 teaspoon coconut oil in a small to medium frying pan over medium heat. Add the leek and cook for 2-3 minutes, stirring, until soft but not burnt.

5. Lightly grease a 12 hole tin muffin tin with coconut oil. 

6. Mash the avocado until smooth and stir in the lime juice. 

7. Combine the 1/2 cup pumpkin puree, cooked leek, turkey mince, eggs, spices, mustard, sweet potato, 1/2 cup polenta and a pinch of salt & pepper in a large bowl (mixing by hand works best!). Divide the meat mixture evenly into each muffin mould (you should be able to get 11-12 muffins out of this batter). Sprinkle a few teaspoons of polenta on top of the muffins. Bake in the oven for 30 minutes or until the top of each muffin is lightly browned. Use one muffin as the test muffin to check that the meat has cooked through and no pink flesh remains. 

8. Cool the muffins in the tin for 5 minutes, then turn onto a wire rack to cook completely. Serve with a small dollop of avocado topping.

Total Cooking time / 60 minutes / 1 hour (not including cooling time)

LOW CARB BANANA CHOC MUFFINS



These muffins were adapted from a recipe a client gave me. You can add 2 scoops of protein powder to the batter if you desire. I prefer to add an overripe banana. These dairy muffins are very easy to make and require no flour whatsoever. I made these on Friday and again today and have tweaked the recipe somewhat. The batter will appear quite runny before the muffins are cooked, however it is meant to look like this. I used dairy-free Lindt 70% dark chocolate for this recipe, however you can use whatever dark chocolate you have on hand or replace the chocolate with nuts. I chose this recipe for today as it is WORLD CHOCOLATE DAY! Celebrate with a small, delicious piece of dark chocolate or by baking with this delicious ingredient, as I did.


Ingredients

  • coconut oil, in liquid form 
  • 1 1/2 cups rolled oats
  • 1/4 cup LSA (ground linseed, sunflower & almond)
  • pinch of sea salt
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 2 tablespoons white chia seeds
  • 2 tablespoons flaxseeds 
  • 1 small ripe banana, mashed well
  • 2 tablespoons maple syrup
  • 3/4 cup non-dairy milk, such as oat, rice or almond milk.
  • 2 teaspoons vanilla extract/essence
  • 50g Lindt dark chocolate (4 squares), cut into small pieces
  • 4 free-range eggs, whisked 

Baking 

1. Preheat a fan-forced oven to 180 degrees celsius. 

2. Lightly grease a 12 slot muffin tin with coconut oil. 

3. Combine the remaining ingredients in a large mixing bowl and stir well to combine the dry and wet ingredients. 

4. Spoon around 2 1/2 heaped tablespoons of batter into each prepared muffin slot. Bake for 25 minutes or until a skewer or knife is inserted into the middle of a muffin and comes out clean. 

5. Leave the muffins to cool in their slots for 15 minutes, then remove onto a wire rack or tray and leave to cool completely.

MILLET, ORANGE & LEMON MUFFINS



Whilst this photo is crystal clear (no filter on instagram required) I couldn’t for the life of me figure out how to import the original photo onto my computer. So I have to be satisfied with an instagram one. 

Moving on...these muffins are adapted from another Heidi Swanson specialty and are incredible for a gluten and dairy free treat. They are fluffy, bright and the zest of the orange and lemon is very prominent in the flavour. You almost feel as if you are eating a fruity cornbread when treating yourself to one of these muffins. It’s also a great way to consume some millet, which is an ancient seed (often mistaken for a grain) that can be cooked similarly to how quinoa, brown rice, oatmeal and farro is cooked. Millet’s popularity has risen in recent years due to the fact that it is gluten free and due to its nutritional benefits. This little seed contains ample amounts of magnesium (which assists in lowering blood pressure, decreases the risk of heart disease and eases muscle cramps and tightness), is full of fibre which slows down digestion and leaves you feeling fuller for longer, is high in alkaline (which helps our body pH to stay balanced) and is easy to digest.



INGREDIENTS
  • coconut oil, to grease muffin tin 
  • 1 heaped cup gluten-free plain flour
  • 1 heaped cup gluten-free self raising flour
  • 1/3 cup raw millet
  • 1 teaspoon gluten-free baking powder
  • 1 teaspoon baking soda / bi-carb of soda 
  • 1/2 teaspoon sea salt
  • 1 cup lactose-free yoghurt
  • 2 free-range eggs, beaten
  • 1/2 cup almost melted nutalex 
  • 1/2 cup organic honey
  • the grated zest of 1 medium lemon and 1/2 a large orange
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice 


BAKING 

1. Preheat a fan-forced oven to just above 200 degrees celsius and place a rack in the top third of the oven. Lightly grease a 12 hole muffin tin with coconut oil (using baking paper to grease creates the least amount of mess). 

2. Stir together the flours, millet, baking powder, baking soda and salt in a large bowl. 

3. In another large bowl, whisk the yoghurt, eggs, nutalex, honey and lemon & orange zest and juice until well combined. 

4. Add the wet ingredients to the dry ingredient bowl and stir gently until the flours are just stirred through. 

5. Divide the batter into the 12 prepared muffin holes, filling the batter to the rim or just below. To ensure that the muffins rise evenly, wet a tablespoon with water and run the spoon along the tops of the batter in each hole to even the muffin tops. 

6. Bake for 20-22 minutes or until the muffin tops are golden and you can just start to see cracks forming on the top of the muffins. Leave in the tin for five minutes, then transfer the muffins onto a wire rack and leave to cool completely.

BEETROOT CUPCAKES




These beetroot cupcake cross muffins could also be described as the healthy version of red velvet cupcakes. I’ve witnessed several friends attempting to eat a cake that contained beetroot and being unable to get over the fact that they are eating a vegetable for dessert. To that I simply say, try eating it again. This beautiful Teresa Cutter gluten-free dairy-free cupcake recipe is filled with natural sweeteners like cacao powder, almonds, cinnamon, honey and of course beetroot. It has quickly become one of my favourite treats to bake and my fiancĂ©e cannot get enough of them (which is saying something as I have extreme trouble getting him to eat anything that does not contain meat). If you cannot get past the fact that these cupcakes do not have a topping or frosting, scoop some natural yoghurt or warm berries on top. 


INGREDIENTS

  • 260g (2 medium) unpeeled beetroot, washed & grated raw
  • 1 teaspoon vanilla extract or paste (paste is far better!)
  • 2 eggs, preferably free-range, beaten
  • 150g (1 1/2 cups) ground almonds / almond meal
  • 1 teaspoon ground cinnamon
  • 1/5 - 1/4 cup raw cacao powder
  • 2 heaped tablespoons honey 
  • 3 tablespoons coconut oil
  • pinch of sea salt 
  • 1/2 teaspoon bicarb soda or 1 1/2 teaspoons gluten-free baking powder 

COOKING 

1. Preheat a fan-forced oven to 160 degrees celsius. Lightly grease a 10 capacity muffin/cupcake tin with coconut oil. 

2. Combine the grated beetroot, vanilla, eggs, almond meal, cinnamon, cacao, honey, coconut oil, salt and bicarb or baking soda into a large bowl and stir/mix until all ingredients are combined. Spoon the mixture into the 10 prepared cupcake tins, make sure each tin has the same amount of mixture. Bake for 35-40 minutes or until cooked through (that is, you can insert a skewer or knife into the centre of any cupcake and it will come out clean). Remove from the oven and leave to cool. Serve topped with natural yoghurt, mixed berries or by itself (my favourite way to eat them).
