PEANUT CHICKEN SATAY


Whilst the several hours of marinating initially discouraged me from making these skewers, do not let it deter you; the marinating time gives the chicken intense flavour. It is hard to determine if the essence of lime or peanut butter is more dominant, as each bite of chicken delights your taste buds with a slightly different flavor from the previous morsel. I could write a poem about these flavourful skewers. I think its safe to say that I could never be a vegetarian. 


 
INGREDIENTS

  • 500g chicken breast, cut into 3cm cubes
  • 35-40g smooth reduced-fat peanut butter
  • 75g lime juice
  • 100g soy sauce 
  • 2 garlic cloves, crushed 
  • pinch of smoked paprika
  • 1 tablespoon white wine vinegar
  • pinch of sea salt

COOKING 

1. Combine the chicken, peanut butter, lime juice, soy sauce, garlic, smoke paprika, white wine vinegar and sea salt in a large bowl. Toss well and leave to marinate in the fridge for at least 8 hours. 

2. Soak 10-12 wooden skewers in water for at least 30 minutes prior to cooking. (This is so the skewers do not split in the oven). 

3. Preheat the oven to 180 degrees celsius. After the chicken has marinated, thread the chicken onto the soaked skewers. Line an oven tray with baking paper. Place skewers on the tray and cook in the oven for 5 minutes each side.

Preparation time: 10 minutes, plus 8 hours marinating time
Cooking time: 10 minutes
