BROWN RICE with TOFU & BROCCOLI



I love creating and eating vegetarian meals. Brown rice with tofu & broccoli is a favourite of mine, as it is so easy to make and very filling, due to the plentiful amount of protein that tofu contains. Make sure to follow step 1 and 'dry out' the tofu first or it will not hold its shape when cooking. If you are not a fan of tofu, you could substitute for 2 eggs and make an omelette or cook 400g chicken breast. 


INGREDIENTS

  • 400g firm tofu, halved 
  • 1 cup brown rice
  • 1 head of broccoli, stalk & florets roughly chopped 
  • 1 tablespoon extra virgin olive oil
  • paper towel
  • 2 spring onions, finely chopped, plus extra to serve 
  • 1 garlic clove, finely chopped or crushed 
  • 2 tablespoons soy sauce 

COOKING 

1. Place the halved tofu between two chopping boards or plates with a weight on top (I used a jar of nuts). Raise one end (I placed a small scale underneath one side of the chopping board) and sit for 25 minutes. 

2. Meanwhile, bring the rice and 2 1/2 cups of water to the boil in a medium saucepan over high heat, covered with a lid. Once boiled, reduce to a simmer and place a small colander or sieve with the broccoli florets & stalk on top of the pan, covered. Leave to steam for around 5 minutes, then check to see if the broccoli is tender by placing a fork into a stalk. If the fork slides in with just a little bit of resistance, the broccoli is tender but not mushy. Remove the colander or sieve with the broccoli and continue to cook the rice, covered for another 10 minutes or until all water is absorbed and rice is tender. 

3. Once the tofu has sat for 25 minutes, chop into slim, even strips. Heat the olive oil in a medium pan over medium heat, swirling to coat. Add the tofu strips and cover the pan. Cook for around 3 minutes on each side or until the tofu is lightly browned. Remove from the heat and place on a few paper towels, then pat with another few paper towels to remove the excess oil. 

4. Lower the heat on the stove to low, then add the 2 spring onions and garlic, stirring to cook for 2 minutes. Next add the cooked broccoli, cooked rice, cooked tofu and soy sauce and stir gently over low heat until all ingredients are combined. 

Divide the rice into 4 bowls, then sprinkle extra spring onions on top, if desired.

SUSHI SALAD BOWL



I love fresh, bright and quick to prepare meals, hence this Sushi Salad Bowl is a favourite of mine. Having tried my hand at making sushi before, this is a much quicker and less painstaking process which tastes like the inside of my ideal sushi roll. You can play with the ingredients and add lemon, daikon, salmon, toasted seaweed, coriander etc or remove any ingredients below that you do not like/have on hand. I kept my sushi salad bowl very simple (it was Sunday night after all). 


INGREDIENTS

  • 1 cup brown rice 
  • 2 tablespoons rice wine vinegar 
  • 1 tablespoon rice bran oil / sesame oil 
  • 2 green shallots, finely chopped, plus extra to serve 
  • Optional - 15cm stick fresh lemongrass, finely chopped
  • 3cm piece fresh ginger, finely grated
  • 300g free range chicken breast, cut into 3cm even pieces 
  • 150g green beans, cut into 2cm pieces 
  • 150g red cabbage or wombok or a mixture of bowl, shredded 
  • 1 medium carrot, finely grated
  • 1 Lebanese cucumber or 1/2 continental cucumber, diced 
  • 1 ripe avocado, sliced 
  • 4 teaspoons white /black or a mixture of both (1 teaspoon for each serving) 
Dressing
  • the juice of 1 medium lime 
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons soy sauce 

COOKING 

1. Place rice and 2 1/2 cups water in a medium saucepan and bring to the boil over medium-high heat. Reduce to a simmer and cover for around 12-15 minutes or until all water is absorbed and the rice is cooked. Remove from heat and add the rice wine vinegar, then fluff the rice with a fork to stir it in. 

2. Meanwhile, heat oil in a medium frying pan over medium heat. Add the shallots, lemongrass (if using) and ginger and stir for 2 minutes, taking care not to burn the ingredients. Then add the chicken pieces and cook, stirring often for approximately 4-5minutes or until the chicken is cooked. 

3. Remove the chicken with the shallots, lemongrass and ginger from the pan and now add the beans and cabbage. Stir for around 3 minutes or until beans are slightly tender. 

4. Pour the dressing ingredients in a small bowl or mug along with 2 tablespoons water and stir well. 

5. Distribute the rice, carrot, cucumber, avocado, chicken and beans & cabbage into four bowls. Sprinkle 1 teaspoon sesame seeds over each bowl and drizzle dressing over the top and serve.

SIMPLE PORK & SILVERBEET on BROWN RICE



Silver beet or swiss chard as it is also called, is all around at the moment and is selling at an uber cheap price. Silver beet has an earthy flavour and is a great source of fibre, folate and vitamins A and C. This vegetable tastes delicious with garlic, herbs, chilli and/or lemon. This is my go-to dish whenever I want to make a no-fuss dinner for myself and Chris. Chris added a splash of soy sauce to his dish (what is it with men and adding sauce to things?) however I think it is delicious with just the garlic, chilli flakes, spring onions and pepper. Just a quick note; the amount of rice per serving is meant to be small, so don't worry if it looks tiny, as the silver beet & pork will fill you up. 



Ingredients
  • 1 cup brown rice 
  • 1 tablespoon rice bran oil
  • 2 garlic cloves, finely chopped
  • 500g extra lean or organic pork mince 
  • 1 bunch of silver beet, white stalks removed, leaves washed & shredded 
  • Optional- 1 spring onion, roughly chopped & a sprinkle of chilli flakes

Cooking 

1. Place the rice and 2 cups of water in a small to medium saucepan and bring to the boil over high heat. Once boiled, reduce to a simmer and cook for 20 minutes or until all the water is absorbed and the rice is tender. 

2. Meanwhile, heat the oil in a large, deep frying pan over medium heat. Add the garlic and stir well for 1 minute, then add the pork mince. Cook the pork mince for 5 minutes or until it is just cooked, breaking up all the lumps. 

3. Add the shredded silver beet to the pork and cover with a lid. Leave the silver beet for 2-3 minutes or until it has just wilted, then remove the lid and stir well to combine. Sprinkle with a generous dash of ground black pepper. 

Divide the rice into 4 servings, then add the silver beet & pork and  sprinkle spring onions and chilli flakes on top, if desired.

TEX-MEX BROWN RICE SALAD




Calling all lovers of Texan-Mexican food! After living in Washington DC for 7 months in 2009, I came home packing quite a few more kilos than when I had left, thanks to the famous ‘Tex-Mex’ cuisine that has become increasingly popular in the land of the free. Two and a half years have passed since then and I still crave Chipotle takeaway more often that I’d like to admit. Yesterday afternoon I had a particularly strong desire for this food and decided to make my own, healthier version of tex-mex cuisine. This rice dish is gluten free and sans cheese, which they would shoot you forgetting in the United States. The coriander, tomato, red onion and avocado add beautiful colours to this dish and taste extremely fresh. The red kidney beans are a nice additional to add more protein to this salad. You could also try brown lentils or chickpeas.


INGREDIENTS 

  • 1 cup brown rice 
  • pinch of smoked paprika
  • 2 tablespoons burrito or taco seasoning
  • 500g chicken breast, cut into even sized 3-4cm pieces 
  • 1 tablespoon rice bran oil
  • 1 x 400g tin red kidney beans, rinsed and drained
  • 4 medium tomatoes, diced
  • 150g cucumber, diced  
  • 1 medium sized avocado, roughly chopped 
  • a handful of roughly torn fresh coriander 
  • 1 lime, cut into wedges 

COOKING 

1. Combine chicken breast, burrito or taco seasoning, smoked paprika and oil in a medium bowl and refrigerate for 10 minutes to marinate. 

2. Meanwhile, heat a medium saucepan, covered, with rice and 2 cups of water over high heat. When water begins to boil reduce to a simmer and leave rice to cook for around 10-12 minutes. When water has completely absorbed remove the rice from the stove. 

3. After the chicken has marinated for 10 minutes heat a medium to large frying pan over medium heat. Add the chicken to the pan, stirring often for 4-5 minutes or until the chicken is lightly golden in colour and no pink flesh remains. Remove from heat and place a cover over the meat so it stays warm. 

3. When rice has cooked, place it on a large plate. Top with chicken, red kidney beans, tomatoes, cucumber and avocado. Add a pinch of sea salt to the chopped avocado if you wish. Top with coriander and lime wedges.
