STUFFED VEGETARIAN MUSHROOMS



I have been trying to eat mushrooms for a few years now, however I find them very hard to get down! My good friend Tahnee told me to fry them in oil, thyme and garlic, hence this recipe was born. I also shared a delicious breakfast of Portobello mushrooms with her a few Sundays ago and was inspired to make my own version of stuffed mushrooms. Three things surprised me when I made this dish: 
1. How filling mushrooms are,
2. How much my husband loved it (and he usually hates anything that does not contain meat) and
3. How much I liked these mushrooms! 
It is a very simple recipe and the finished product looks very cute or at least I think so! I think I've successfully cured myself of my mushroom hatred, which I am very proud of! 

Ingredients

  • baking paper
  • 4 Portobello / Flat mushrooms, washed & stalks removed
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, finely chopped
  • 6 sprigs thyme, leaves removed & sprig discarded
  • 1 carrot, grated 
  • 20 almonds, halved
  • 1/4 cup grated light cheese 
  • 2 tablespoons finely chopped fresh basil, optional- extra to serve 
  • ground black pepper
  • 1 egg, preferably free-range

Cooking 

1. Preheat a fan-forced oven to 200 degrees celsius. Line a medium baking tray with baking paper. 

2. In a small fry pan, heat the olive oil over medium-low heat, swirling to coat the pan. Add the garlic and thyme and cook, stirring often, for 1-2 minutes or until the garlic is fragrant. Remove from heat and brush this sautéed mixture onto the outside of the mushrooms so that they do not stick to the paper. Place the mushrooms on the baking paper, cap side down. Spoon the leftover sautéed mixture into in a medium bowl. 

3. Add the carrot, almonds, cheese, basil and pepper to the medium bowl and stir well. Add the egg and stir again to combine. Spoon the vegetable mixture into the mushrooms, making sure to use all the mixture, even if it overlaps the mushrooms slightly. 

4. Bake in the oven for 20-25 minutes or until the mushrooms are brown and the cheese is golden. Serve warm, alongside a fresh salad.

WARM STEAK SALAD SANDWICH



This steak salad sandwich idea came about whilst I was browsing an issue of Super Food Ideas several years ago. I love the idea that a steak sandwich can become a salad and can be eaten at dinner time without any judgement. If you are not prepared to cook your own beetroot do not use the tinned beetroot as there is so much sugar in those slices! I've listed how to cook the beetroot to make it easy, however if in a rush leave it out or cook it before that night; for example I roasted my beetroot on Sunday and used it on Tuesday. Roasting a beetroot is so simple: you let the oven do the work for 25-30 minutes and you can use this time to get the salad ready. 

INGREDIENTS

  • 1 medium beetroot, peeled, ends trimmed and cut into half 
  • 1 teaspoon extra virgin olive oil
  • 400g lean eye fillet steak, cut into small even strips
  • a generous handful of baby spinach leaves and/or mixed lettuce leaves, washed and drained
  • 2 large tomatoes, washed and cut into wedges
  • 1/2 a continental cucumber, cut into slices 
  • 1 ripe avocado, cut into small pieces
  • 2 slices of wholemeal or multigrain bread (or gluten-free if intolerant), toasted and torn into little pieces
  • 30g of grated reduced-fat cheese 

Dressing
  • 1 small garlic clove, finely chopped or crushed
  • 2 tablespoons lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon extra virgin olive oil 
  • 2 tablespoons water 
  • ground black pepper

COOKING 

1. *NB: Skip this step if you are not using beetroot. 
Preheat a fan-forced oven to 200 degrees celsius and wrap the beetroot halves in foil. Cook for 25-30 minutes or until beetroot is tender (that is, you can slice the beetroot with a knife easily). Remove from oven and leave to cool for 5 minutes, then slice beetroot into thin wedges. 

2. *Either perform this step once the beetroot has just been removed from the oven or start with this step. 
Heat a medium frying pan over low-medium heat, adding the oil and swirling to coat. When the pan is hot add the beef and cook, tossing often, for around 5 minutes or until the beef is cooked & browned to your liking. Remove from heat. 

3. Whilst the beetroot and/or beef is cooking, make the dressing by combining all the ingredients and stirring well. 

2. Combine the baby spinach/lettuce, tomatoes, cucumber, avocado, torn bread pieces, cheese and cooked beetroot in a large serving bowl. Add cooked beef to the bowl and toss well to combine. Drizzle the dressing over the top and serve. 

Serves / 4 
Total Preparation & Cooking time / around 40 minutes if cooking the beetroot / less if not

TURKEY & POTATO SALAD


Summer has almost come to Brisbane! Time to crowd the beaches, work on our tans and host Sunday afternoon bbq’s.  Time, as well, for many of us to change our palates. I don’t know about you, but if the temperature outside is above 30 degrees, I cannot stomach hot food very well. All my meals have to be refrigerated and take on the form of ‘salads’. Simple to prepare, this turkey & potato salad would make an excellent dish for a lazy bbq on a Sunday afternoon.

INGREDIENTS 

  • 550g (1 large) sweet potato, peeled and cut into 3cm pieces
  • 2 teaspoons extra virgin olive oil
  • 1 large garlic clove, finely chopped
  • 400g turkey breast/fillet, cut into even 3-4cm pieces
  • 1/2 teaspoon ground paprika
  • the juice of 1 lemon 
  • 150g pickles, roughly chopped 
  • 1-2 handful/s of fresh spring onions, chives, parsley and/or coriander, finely chopped 
  • 40g reduced-fat feta, crumbled

COOKING 

1. Place the potatoes in a medium saucepan half filled with water and bring to the boil. Boil for around 10 minutes or until potatoes are tender but not mushy. Drain well in a colander over cold running water. 

2. Whilst the potatoes are cooling, heat 1 teaspoon oil in a medium to large frying pan over medium heat and add the garlic. Stir for 1-2 minutes or until garlic is fragrant, then add the turkey. Cook, stirring often for around 6 minutes or until all pieces are coloured and no pink flesh remains. Turn off the heat and leave the turkey in the pan, covered, to rest for 5 minutes. 

3. Stir the remaining teaspoon of oil, lemon juice, ground paprika and a splash of water in a small bowl or cup. 

4. Place the potato in a large serving bowl and add the turkey, pickles, fresh herb/s, feta and a generous pinch of ground black pepper. Drizzle the dressing from step 3 over the top and divide into four bowls.

BAKED SEA PERCH with STEAMED BROCCOLI & SWEET POTATO FRIES


I was very lucky to be given several Sea Perch fillets from my father-in-law, who caught them fishing up in Northern QLD earlier this year. Sea Perch is often called Red Emperor, however it is not a true Emperor fish. As I am not an avid fish eater but have decided to become, due to the numerous health benefits fish provides, I did some extensive research regarding how to cook fish before diving in. I chose baking the fish as apposed to grilling or pan frying, as it seemed a better way to keep the moisture in the fish. I was surprised to learn that Sea Perch is one of Australia's most highly regarded fish...lucky I have a whole freezer full of them! 


INGREDIENTS

Baked Fish 
  • the juice of half a lemon
  • the juice of half a lime (or the juice of 1 lemon or 1 lime)
  • 1 large garlic clove, finely chopped or crushed
  • 1/2 teaspoon chilli flakes
  • 1/4 cup fresh parsley, finely chopped
  • 2 sea perch fillets, skinned
  • al foil 
  • 1 tablespoon extra virgin olive oil 
  • shallow oven tray or baking dish 
Sides
  • 1 medium sweet potato, washed, peeled & cut into thin even wedges
  • 1 teaspoon extra virgin olive oil 
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1 head of broccoli, separated into florets and stalk chopped


COOKING 

1. Preheat a fan-forced oven to 180 degrees celsius. Toss the sweet potato wedges with the oil and spices, then place on a lined baking tray. Place at the very top of the oven and cook for 20-25 minutes or until fries are lightly browned and cooked to your liking. Remove from heat. 

2. Combine the lemon and/or lime, garlic, chilli and parsley in a small bowl, mixing well. 

2. Place the fish in separate al foil, then brush the oil over the front and back of the fish fillets. Pour half of the marinade over the top of each fillet and wrap the fish like a parcel in the foil. 

3. When the fries have been in the oven for 15 minutes, bake the fish in the oven in a shallow tray or baking dish for 10-12 minutes, using a knife to see if the fish is cooked (if it is cooked, the fillet will flake slightly when the knife enters). Remove from the oven. 

4. When the fish has been placed in the oven, bring a small saucepan to the boil over high heat, covered. Remove the lid and place a sieve or colander in place of the lid with the broccoli florets & stalks inside. Steam for 4-5 minutes or until just tender. Remove from heat and toss with ground black pepper. 

Serve fish alongside 1/2 of the steamed broccoli and 1/2 of the sweet potato fries.

QUINOA CHICKEN RICE PAPER ROLLS


A lovely friend of mine fed these rice paper rolls to me the other weekend and I have not been able to stop thinking of them since, therefore I made my own version of them. I love the twist Collette has put on this traditional light Vietnamese meal, by adding quinoa and oven baked pumpkin to pump up the fillings. You can use skinless bbq chicken if you prefer this to poaching chicken breast and can choose to leave out the quinoa if you want to make this meal more low-carb. If you are vegetarian add the quinoa and some thinly sliced avocado. This is a such a light, fresh lunch or dinner that I can see myself making it for many, many years to come. 

Ingredients

  • baking paper 
  • 300g pumpkin, peeled, deseeded and cut into 2cm pieces 
  • 1 teaspoon extra virgin olive oil
  • 250g cooked chicken, skin removed or 250g chicken breast 
  • 1/3 cup white quinoa
  • 12 rice paper round sheets
  • 1 Lebanese cucumber, cut into thin sticks
  • 2 generous handfuls of baby spinach or green lettuce
  • 2 spring onions, finely chopped
  • Optional- 2 handfuls of fresh coriander leaves, roughly chopped
  • Dipping sauce - hoisin sauce or sweet chilli sauce 

Cooking 

1. Preheat a fan forced oven to 200 degrees celsius. Line a baking tray with baking paper. Toss the pumpkin and oil in a medium bowl to combine, then place the pumpkin in a single layer on the tray. Bake in the oven for 20 minutes or until the pumpkin is tender.

2. If you are using cooked chicken, ignore this step. If you are not using cooked chicken, you will need to poach the chicken breast. Whilst the quinoa is cooking, place the chicken breast in a small to medium saucepan. Bring to the boil, covered, then simmer for 10 minutes. Turn off the stove and let the saucepan stand, covered, for 5 minutes. Remove the poached chicken from the pan and leave to cool for a few minutes before 'shredding' the chicken (I do this with 2 forks and pull in separate directions, as you would when 'pulling' pork). Discard the poaching liquid. 

3. Rinse the quinoa thoroughly, twice, with your hands and strain through a sieve. Bring the quinoa to boil in a small to medium saucepan over high heat with 1 cup water, covered. Once boiled, lower to a simmer and continue to cook, covered, until all the water is absorbed, around 6 minutes. 

4. Once the pumpkin, chicken and quinoa are cooked, pour boiling hot water into a medium bowl. Lay the rice paper sheets next to the water. Place your cool fillings; cucumber, lettuce, shallots, coriander (if using) on a plate next to your cooked fillings. You are now ready to make your rice paper rolls! 


5. Soften each rice paper sheet by individually dipping it in the water and rotating the sheet with your fingers for one rotation only; the paper will feel moderately wet but not completely softened. The consistently of the rice paper should be pliable and slightly tacky. Have a flat surface such as a large clean plate or your bench top to place the paper. Just work with one softened rice paper sheet at a time, as it is much less fiddly. 

6. To wrap - I use the Two End Method. Centre the ingredients vertically, using 1/12 of all of the above ingredients, and position them about 4cm from the lower edge of the rice paper. Bring the lower and upper edge of the paper up towards the filling, then roll up the rice paper from one side to the other (I roll from left to right) and seal. Continue until no ingredients and no rice paper sheets remain (the ingredients should make 12 rice paper rolls comfortably). 

Serve with one of the dipping sauces mentioned and enjoy. 

Makes / 12  / Serves 4 = 3 rice paper rolls each

PRAWN & MANGO WRAPS



This is a light and easy meal that screams 'summer' to me. I like to buy prawns all ready to be cooked, but sometimes I do the dirty work myself; peeling, deveining and removing their tails. It's up to you which way you go. I can see myself eating a lot of these wraps over the hot months! 


INGREDIENTS
  • 250g prawns, peeled, deveined & tails removed, uncooked 
  • 1 tablespoon sweet chilli sauce 
  • 1 teaspoon extra virgin olive oil
  • 8 small tortilla wraps or mountain bread wraps 
  • a handful of mixed or green lettuce, washed and roughly shredded
  • 100g cucumber, thinly sliced into rounds
  • 1 ripe avocado, sliced thinly
  • 1 small mango, cut into cubes, around 100g 
  • Optional- a handful of fresh coriander leaves

COOKING 

1. Combine the prawns and sweet chilli sauce in a small bowl. 

2. Heat and swirl the oil in a medium fry pan over medium-low heat. Add the prawns and cook, stirring regularly, for 2 - 3 minutes or until the prawns are pink and no longer translucent. Remove from heat immediately so they do not continue to cook. 

3. Lay a wrap down flat on a plate or chopping board. Arrange 1/8 of the cooked prawns, lettuce, cucumber, avocado, mango and coriander if using in the middle of the wrap and fold to wrap. Repeat until all wraps and ingredients are used. 

Serves / 4 / 2 wraps per serving

OMELETTE with CHICKEN & GREENS



A large portion of the recipes I make up come from experiences I have eating out. I had a delicious Asian Chicken Omelette at a Brisbane cafe recently which is where the inspiration for this versatile lunch or dinner omelette comes from. You can make each omelette individually, so that each serving has their own omelette (which is very cute) or you can make one big omelette in a large frying pan and then divide it into four even portions. You could make this omelette vegetarian by omitting the chicken and adding more vegetables, such as carrot, wombok (Chinese cabbage) and / or Chinese greens, such as buk choy and pak choy. 

Ingredients

  • 500g chicken breast, preferably free-range, fat trimmed and cut into small even pieces 
  • 1 large garlic clove, finely chopped
  • 3cm fresh ginger, finely chopped
  • 2 tablespoons oyster sauce
  • 8 eggs, preferably free-range
  • 4 teaspoons soy sauce 
  • 2 spring onions, finely chopped
  • 1 cup water 
  • 3 teaspoons extra virgin olive oil 
  • 150g green beans, trimmed and cut into small even pieces
  • 1 head of broccoli, stalk and florets cut into small pieces
  • Optional- a handful of fresh coriander leaves, to serve 
  • Optional- 1 extra spring onion, finely chopped 

Cooking

1. Combine the chicken, garlic, ginger and oyster sauce in a medium bowl. Place in the fridge to marinate for at least 10 minutes. 

2. Meanwhile, make the omelettes. Whisk 2 eggs, 1/4 cup water, 1 teaspoon soy sauce and 1/4 of the spring onions in a tall glass.  Heat a medium frypan over medium-low heat and add 1/2 teaspoon oil. Swirl to coat the pan then pour in the egg mixture. Cook for around 2 minutes on the first side or until the egg is almost set on one side. You can either flip the omelette in half so that it overlaps or you can flip the entire omelette over, however the latter method is quite tricky! Cook the omelette on the second side for only 1 minute or until set. Remove from heat and place each individual omelette on a serving plate. Continue this process until all four omelettes are cooked. 

3. Once the omelettes are cooked, heat the remaining teaspoon of olive oil in the fry pan over medium-low heat and swirl to coat. Add the marinated chicken and cook for around five minutes, stirring often, or until the chicken is cooked (the test: the middle of the largest piece of chicken is white, not pink). Remove the cooked chicken from the stove and divide evenly between the four plates, keeping the chicken liquids in the pan. Place on top of each omelette or to the side. 

4. Add the beans and broccoli to the pan and cook, covered, over medium-low heat for around 4-5 minutes or until the broccoli is just starting to become tender (the test: you can slide a fork into the stalk of the biggest broccoli floret and encounter just a little resistance). Remove from the heat and divide the cooked vegetables evenly between the four plates. Place the vegetables on  top of each omelette or to the side. 

Serve warm, topped with extra spring onions and/or coriander, if desired.

BEETROOT, LENTIL & SUMAC SALAD



When the weather gets hotter and the days get longer, I like to get creative with salads, much to my husband's horror. Now, salad can be very boring and mundane if you just use the same ingredients every time, the token tomato, lettuce, cucumber and store bought dressing. However, if you get imaginative and add beans, lentils, eggs etc, your salad can turn into a main meal. Which is what I did the other afternoon. I highly recommend buying the spice sumac to flavour some of your salads. Sumac is a Middle Eastern spice that grows wild in the mid-east and Italy. It is purple in colour and has a sharp, sour lemon taste- don’t let this put you off though! It is superb in salads and is also used as a seasoning for meat. One teaspoon is all you need. If you are a vegan or do not eat eggs, substitute the hard boiled eggs for 1 ripe avocado. 


 INGREDIENTS


  • 3 medium or 2 large beetroot, peeled, ends trimmed and cut in half or quarters to cook faster 
  • 4 eggs, preferably free range
  • 1 x 400g tin of brown lentils, rinsed and drained
  • 1 large tomato, sliced into thin wedges
  • 2 large handfuls of lettuce (I like to use mixed lettuce)
  • 1 teaspoon ground sumac
  • 80g reduced-fat feta, crumbled
  • Optional- if not using eggs, 1 ripe avocado, roughly chopped 

COOKING 

1. Preheat a fan-forced oven to 200 degrees celsius and wrap the beetroot halves in foil. Cook for 25-30 minutes or until beetroot is tender (that is, you can slice the beetroot with a knife easily). Remove from oven and leave to cool for 5 minutes, then remove the foil and slice beetroot into thin wedges. 

2. Meanwhile, bring a small saucepan of water with the eggs to the boil, covered. Once boiled continue to cook for 5 minutes, then turn off the stove and rinse the eggs under cold water. Let them sit in the cold water for a few minutes, as this will stop them from cooking further and cool them down so they can be peeled. 

3. Prepare the lentils, tomato, lettuce, sumac, feta and avocado if using in a medium to large bowl. Toss well. 

4. Peel the eggs and cut into halves or quarters and place on top of the salad. Serve hot or cold.

PRAWN SALAD with GREENS



Even though it is only the beginning of spring, I'm already feeling like making meals fit for summer! This is a perfect meal for a late dinner, as it is incredibly light and healthy. I'm really getting used to making seafood a few times a week and I feel like I'm reaping the health benefits already. Prawns are a complete & great source of protein, as they contain all nine amino acids and 100g of prawns contains a whooping 25g of protein, around the same amount as chicken & beef contain. This seafood is very low in calories (always nice to hear!). 100g of prawns contains a mere 115 or so calories. Whilst prawns do contain higher than average levels of cholesterol, they are made up of GOOD cholesterol due to their healthy fats (Omega 3 fatty acid). Prawns are also a rich in Vitamin B-6, B-12, iron and zinc. They may not be the cheapest meat option, but who isn't willing to spend some money on their health? 

INGREDIENTS
  • 1 teaspoon extra virgin olive oil
  • 1 garlic clove, finely chopped
  • 3cm fresh ginger, grated 
  • 200g green beans, trimmed & cut into 3em pieces
  • 1/2 a bunch buk choy, roughly chopped
  • 1/2 a bunch pak choy, roughly chopped
  • 2 tablespoons soy sauce
  • 300g raw or cooked prawns, shelled & tails on or off 
  • 2 tablespoons lime juice
  • Optional- fresh coriander leaves, torn and 1 spring onion, finely chopped


COOKING 

1. Heat olive oil in a medium fry pan over medium heat, swirling to coat the pan. Add the garlic and ginger and cook, stirring often, for 2 minutes or until fragrant. 

2. Add the cut beans to the pan and cook for 1 minute, stirring, before adding the buk choy & pak choy. Add the soy sauce to the pan and stir well, then cover for 2 minutes or until the buy & pak choy are tender (the beans can still have a little crunchiness to them). 

If the prawns are raw: remove the vegetables from the pan and add a small splash more olive oil to the pan over medium heat. Add the prawns and cook for 1-2 minutes or until they become cloudy in colour. 

If the prawns are cooked: remove the vegetables from the pan and place them in a medium bowl with the cooked prawns. Drizzle the lime juice on top and add the coriander and spring onion, if using. Toss well and serve.

RUSTIC SCRAMBLED EGGS



Here's a no-fuss breakfast recipe for those mornings when oats or toast just won't cut it. I love eating eggs for breakfast, as I get an instant protein hit. I often eat them with a slice of lean ham and baby spinach instead of bread, however you can add 1 piece of wholemeal, multigrain or rye toast to your serving. This is a very simple recipe that can be altered to suit what you have in your fridge/pantry. 


INGREDIENTS

  • 4 eggs, preferably free-range, lightly beaten
  • 2 tablespoons fresh basil, finely chopped, plus a few extra leaves to serve 
  • 1/2 teaspoon of smoked paprika 
  • 1/3 cup reduced-fat cows milk, (if dairy intolerant substitute for soy, lactose-free or almond or oat milk with added calcium)
  • 1/2 red or green capsicum, seeded and finely chopped
  • 1 garlic clove, finely diced
  • 1/2 a small red onion, finely chopped
  • 1 teaspoon extra virgin olive oil 
  • pinch of sea salt & ground black pepper, if desired
  • Optional - either add a thin slice or 2 of lean ham and a handful of baby spinach or 1 piece of wholemeal, multigrain or rye toast per serving

COOKING 

1. Whisk the eggs, basil, paprika and milk in a medium bowl until well combined. 

2. Heat a medium to large frying on medium heat and add olive oil, swirling to coat. Add the capsicum, garlic and red onion and cook, stirring, for around 2-3 minutes or until the onion is soft.  Add the eggs and stir gently until the eggs are just set and 'scrambled'. 

3. Serve half of the cooked eggs on top of ham & spinach or toast with a few basil leaves scattered on top, if desired.

SEARED TUNA with ASIAN GREENS



In my effort to eat more fish, tuna has become the star meat! I love how the taste of tuna steak is not the least bit fishy, especially when combined with Asian flavours. Here is my latest tuna creation; Seared Tuna Steak with Asian Greens. I really like adding edamame to stir frys, however if you are not a fan of soy beans or do not have access to them, you can use 1/2 a head of broccoli instead. I stress that everyone has different stove heatings and likes their tuna cooked differently, so cook it to your liking. In this recipe this tuna is cooked medium rare, not rare. 

INGREDIENTS

  • 1/2 cup brown rice 
  • 2 tablespoons kecap manis
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon lime juice
  • 1 garlic clove, finely chopped
  • 2cm fresh ginger, grated
  • Optional- 5cm lemongrass, finely chopped
  • 1 teaspoon extra virgin olive oil 
  • 2 x 150-200g tuna steak
  • 1/2 a bunch pak choy, end removed and roughly chopped
  • 1/2 a bunch buk choy, end removed and roughly chopped
  • Either 1/2 a head of broccoli, finely chopped into even sized florets OR 100g edamame beans, shelled (weighed after shelling)
  • 2 teaspoons sesame seeds
  • 2 spring onions, finely chopped, to serve 

COOKING 

1. Bring the brown rice and 1 cup of water to the boil in a small to medium saucepan over high heat, covered. Once boiled, reduce to a simmer and cook for around 10 minutes or until all water is absorbed and the rice is just tender. 

2. Meanwhile, pour the kecap manis, vinegar, lime juice, garlic, ginger, lemongrass if using and 2 tablespoons of water into a mug or small jug and stir to combine. Set aside near the stove. 

3. Heat the olive oil in a medium frying pan over medium heat, swirling to coat. Add the tuna steaks and cook for 2 minutes each side. After this time return the tuna to the original side and pour the sauce mixture from step 2 over the top of the tuna. Cook the tuna for 30 seconds each side, making sure to cover it with the sauce. Remove the tuna from the pan, leaving the sauce in the pan and placing the cooked tuna onto your serving plates. 

4. Add the pak choy, buk choy and broccoli or edamame to the pan and cook, stirring often so that the sauce does not stick to the pan, for 3-5 minutes or until the vegetables are tender. Remove from heat. 

Serve each tuna steak with half of the vegetable sauce mixture and half of the rice. Sprinkle 1 teaspoon of sesame seeds and half of the chopped spring onions on top of each dish.

BEEF VERMICELLI SALAD



I have a strange obsession with rice vermicelli noodles. I could eat them every single day if I allowed myself. Here's a very fresh and simple beef vermicelli salad that I love to make. You can use whatever fresh vegetables you have on hand! This is a beautifully light, fresh and vibrant salad, perfect for Spring or Summer! 


INGREDIENTS

  • 400g lean eye fillet beef, cut into thin strips
  • 2cm fresh ginger, grated
  • 1 garlic clove, finely chopped 
  • 1 tablespoon oyster sauce 
  • 1 teaspoon extra virgin olive oil 
  • 100g rice vermicelli noodles 
  • 1 large carrot, grated
  • 1 medium capsicum, finely chopped
  • 1 continental cucumber, finely chopped
  • 2 shallots/spring onions, finely chopped
  • Optional- 2 tablespoons of fresh coriander, finely chopped 
Dressing 
  • the juice of half a lime (around 2 tablespoons)
  • 1 teaspoon fish sauce 
  • 1 tablespoon soy sauce 
  • 1-2 tablespoons water 

COOKING 

1. Combine the beef strips with the ginger, garlic and oyster sauce and marinate in the fridge for 10 minutes. 

2. Meanwhile, prepare the salad. Place the vermicelli noodles in a medium heatproof bowl and pour boiling water over noodles. Stand for 2-3 minutes or until noodles are tender, then drain well in a sieve or colander. Pour cold water over the noodles and drain again. 

3. Preparing the salad: In a large bowl toss the cooked vermicelli noodles with the carrot, capsicum, cucumber, shallots and coriander, if using. 

4. Preparing the salad: Make the dressing by combining all the ingredients in a small bowl and stirring.  If the dressing is too strong, add more water, just a splash at a time. 

5. Once the 10 minutes of marinating is up, heat the oil in a medium frying pan over low-medium heat. Add the beef strips and cook, stirring often, for around 5 minutes or until the beef is browned to your liking. Remove from heat. 

4. Add the cooked beef to the salad and drizzle the dressing over the top. Toss well and serve.

ASIAN BEEF PATTIES / NAKED BURGERS



These Asian beef patties are a favourite of mine to make, as they are light, filling and delicious. I call them 'naked burgers' as you can eat them (and should eat them for dinner) without any bread; instead they can be eaten 'naked' as they are or wrapped in lettuce leaves. Make sure you consume a vegetable side when eating these as they are low in veges. 


INGREDIENTS

  • 500g lean minced beef
  • 1/2 - 1 teaspoon dried chilli flakes
  • 1 teaspoon fish sauce 
  • 1 tablespoon oyster sauce 
  • 1 tablespoon soy sauce
  • 1 egg, preferably free-range 
  • 2 tablespoons shallots finely chopped
  • Optional - 2 tablespoons fresh coriander, finely chopped
  • 1/2 a small red capsicum, finely chopped
  • 1 teaspoon olive oil 
  • Optional - Lettuce leaves (to wrap the patties in)

COOKING 

1. Combine beef, chilli, fish sauce, oyster sauce, soy sauce, egg, shallots, coriander (if using), capsicum and a pinch of ground black pepper in a large bowl. Using your hands, mould the mixture into four even-sized patties. Place on a large plate, cover with plastic wrap and place in the fridge for 15 minutes. 

2. When the 15 minutes is up, heat a large frying pan over medium heat and add the oil, swirling to coat the pan. Place patties in the pan and cook for 3 minutes on each side, covered. Check if the patties are cooked by cutting a patty in half and seeing if any red flesh remains; if it does, continue cooking. 

3. Serve warm with a vegetable side, such as a salad, steamed corn or sweet potato fries. 

Serves / 4 accompanied by a side

TUNA STEAKS with STEAMED CORN & SALAD



A client recommended the 'Ocean Chef' brand of frozen fish to me recently, available at Woolworths supermarkets. In an effort to introduce fish into my diet (and having not been a fan of seafood for most of my life!) I decided that it was time to bite the bullet and make some fish meals. Tuna is a great source of protein, is rich in omega 3 fatty acids and is available for Pestacarians to eat! The Yellowfin Skinless Tuna Steaks that I used are often on sale, as are the other types of frozen fish from Ocean Chef, and feature 8 steaks to a pack, 1 per single serving, hence they are very reasonably priced. I was very pleasantly surprised by how delicious the tuna steak was and how easy and quick it was to cook. You can add any healthy sides that you would like to your tuna steak, I have listed my two accompaniments below. 

INGREDIENTS

Tuna Steaks 
  • 2 similar sized (in thickness and weight) frozen or fresh tuna steaks, completely thawed if frozen
  • paper towel
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons lemon juice
  • 1 garlic clove, crushed or finely chopped
  • 2 tablespoons shallots, finely chopped
Steamed corn 
  • 2 corn cobs, hulks and silks removed and cut into even rounds
  • ground black pepper 
  • Optional - fresh herbs, such as chives or basil, finely chopped 
Basic Salad
  • a generous handful of washed mixed lettuce 
  • 1/2 a small avocado, diced 
  • 1 medium tomato, diced
  • 1/2 a lebanese cucumber or 1/4 of a continental cucumber, diced 
  • 20g reduced-fat feta, crumbled 

COOKING 

1. Wash & rinse the tuna steaks, then pat dry with paper towel. 

2. Brush the tuna steaks with olive oil, then combine the remaining steak ingredients in a small bowl. Pour over the steaks and place in the fridge to marinate for a minimum of 15 minutes and a maximum of 1 hour. 

3. Meanwhile, make the steamed corn by bringing a medium saucepan filled halfway with water to the boil. Add the corn rounds and steam for 5 minutes or until tender. Remove from heat and drain well with cold water, then dry well and toss with ground black pepper & fresh chives, if using. 

4. Whilst the corn is steaming make the basic salad by combining all the ingredients and tossing well. 

5. Once the steaks have marinated for over 15 minutes, warm a grill plate over medium heat and cook the steaks for 2-3 minutes on each side or until the fish starts to flake when tested with a fork. You want the tuna to still be pink in the middle. I like tuna quite pink in the middle, hence if you do not, leave it on the grill/in the pan for longer! 
**NB: If you do not have a grill plate, you may pan-fry the tuna steak by cooking them over medium heat in a medium frying pan, for 2-3 minutes each side, turning the steak over once during cooking. You can test if the tuna is cooked by using the same fork method as above.  

6. Arrange the 1 steamed corn,1/2 of the salad and a tuna steak on a plate. Serve warm.

TURKEY, EGG & LETTUCE CUPS



I really love turkey and often find myself craving unhealthy white bread sandwiches filled with turkey, cranberries, brie and mayonnaise! It's not something that I ever allow myself, so instead I came up with these turkey lettuce cups which are much, much healthier and do not add centimetres to my waistline. My husband likes to use bacon instead, which you can substitute for turkey or ham, as long as you remove the fat. 


INGREDIENTS

  • 150g shaved lean turkey breast or ham, roughly chopped
  • 4 eggs (preferably free-range)
  • 250g low carb kestrel potatoes, peeled & chopped into small pieces
  • 150g cucumber, roughly chopped
  • 2-3 tablespoons fresh chives, finely chopped
  • 1/4 iceberg lettuce or a baby cos lettuce, washed 
  • Optional- 1 tablespoon of reduced-fat grated cheese per serving 


COOKING 

1a. Bring a large saucepan of water to the boil, with the potatoes in the water. Cook for 8-10 minutes or until tender, then drain well in a colander with cold water.

1b. Bring a small saucepan of water to the boil with the eggs in the pan. Boil for 3 minutes, then simmer for 5 minutes. Remove from the pan and drain under cold water. When cool enough to handle, peel the eggs from their shells and roughly chop the eggs. 

2. Combine the cooked potatoes, chopped eggs, turkey, cucumber, chives and a generous amount of ground black pepper in a medium bowl and toss gently. 

3.  Spoon the potato, egg & turkey mixture into the lettuce cups and serve warm or cold. Add 1 tablespoon of cheese per serving, if desired.

VEGETABLE QUICHE



So simple to make, this protein-packed quiche can be stored in the fridge for a few days and used for lunches or for dinner. You can even add some meat for those carnivores out there, by adding 100grams or so of roughly chopped ham. I've made this dish with flour and with polenta and love both ways. I try to add lots of different herbs to this quiche, as they really add to the flavour. I love using chives, basil and parsley, however you could use whatever you have on hand; even dry herbs would work. 

INGREDIENTS 

  • olive oil spray or 1 teaspoon 
  • 1/2 a leek (white part only) or 1/2 a brown onion, finely chopped
  • 1 medium carrot, grated
  • 1 medium zucchini, grated 
  • a large handful of baby spinach, washed & roughly chopped
  • 6 eggs (preferably free range), beaten 
  • 50g reduced-fat grated cheese
  • 1/2 cup plain flour, or gluten free flour or polenta 
  • 3 tablespoons fresh herbs such as parsley, chives, basil, finely chopped

COOKING 

1. Preheat oven to 180 degrees fan-force. Lightly spray or brush a 20cm x 30cm baking dish with minimal oil (no more than a tablespoon if your oil is liquid, not a spray. 

2. Assemble all of the other ingredients in a large bowl including 1/2 a cup water and stir well to combine, adding a generous amount of ground black pepper. 

3. Pour the mixture into the prepared dish and make sure it is evenly spread. Cook in the oven for around 40-45 minutes or until quiche is lightly golden and the egg is firm. Serve warm or cold.

CHICKEN SALAD with ZESTY DIJON DRESSING



This recipe was initially going to be a Quinoa salad dish, however I wanted something light for a light dinner and decided to leave out the quinoa carbs. You could use whatever raw vegetables you have on hand, such as capsicum, cabbage, shallots, the list goes on. I like adding lentils or legumes to my salads for an additional hit of protein. As you may have realised with the ingredients in my recipes, I do not prescribe to the Paleo way of eating and think that eating lentils, legumes and grains is very important for my health.  You can also add a touch of crumbled feta or toasted almonds, walnuts, pumpkin seeds or sunflower seeds to this salad for more texture and flavour. Look back at my Poaching Chicken recipe for steps on how to poach correctly or if pressed for time, buy a free range cooked chicken! The zesty dijon mustard is a favourite of mine, as it is filled with flavour and is low in calories- try to use apple cider vinegar as it contains less sugar than other vinegars. 



INGREDIENTS


  • 300g cooked chicken breast, shredded 
  • 150g green beans, trimmed & roughly chopped
  • 2 generous handful of baby spinach
  • 2 medium tomatoes, finely diced
  • 1 x 400g tin of brown lentils, rinsed & drained 
  • 100g carrot, grated 
  • 1 Lebanese cucumber or 1/2 continental cucumber, diced 
  • 1 small to medium ripe avocado, diced 
  • 3-4 tablespoons fresh chives / basil / parsley, finely chopped 
  • a generous amount of ground black pepper 

Zesty Dijon Dressing
  • 1 garlic clove, finely chopped or minced 
  • 1 heaped tablespoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • the juice of 1/2 a lemon or lime 
  • 2 tablespoons water 
  • ground black pepper 

COOKING 

1. Combine all the salad ingredients in a large serving bowl and toss well to combine. 

2. Make the salad dressing by combining all the ingredients in a small bowl and stirring with a fork to combine. If the salad dressing is too thick, try adding a little extra water.
