CSIRO BEEF BURGERS WITH SALSA


I strongly believe that the cookbook above greatly helped my relationship with my partner. Since moving in together we quickly noticed that our appetites were as different as night and day. He loves to eat meat in every single meal, and I do not. He can go without vegetables for a whole week, and I cannot go one day without them. He loves pasta and other starchy carbs, whereas my gluten intolerance means that my stomach does not enjoy these. So, how did we make it work? The CSIRO total wellbeing diet recipe book, thats how. Many of the recipes in this book are low-fat twists on old favourites, such as chicken nuggets, beef burgers, chicken satay and sweet crumbles. Several of the recipes are gluten free, or can easily be adjusted to become so. Below is a delicious, guilt-free recipe for beef burgers. 


Ingredients 


For the burgers 

  • 500g lean minced beef
  • 1 tablespoon fresh thyme, finely chopped
  • 1 brown onion, grated
  • 3 cloves garlic, crushed
  • 1 tablespoon Worcestershire sauce 
  • 2 eggs, lightly beaten 
  • 1 tablespoon olive oil
  • OPTIONAL- 4 wholemeal bread rolls
    • I tend to serve the burgers without bread rolls, as they do add a fair amount of calories and eating bread at dinner is not a great idea for the stomach. 
For the salsa
  • 400g tin chopped tomatoes, drained 
  • 1 red capsicum, seeded and finely diced
  • 1 small red onion, finely diced 
  • 2 tablespoons fresh basil, finely chopped
  • 1 tablespoon lemon juice
Cooking 

1. Combine the beef, thyme, brown onion, garlic, tomato pasta, worcestershire sauce and egg in a large bowl. Form into four patties, cover with plastic wrap and refrigerate for 30 minutes. 

2. To make salsa, mix together all the ingredients. 

3. Heat olive oil in a non-stick frying pan over medium heat. Add the burgers and cook for 5 minutes each side, flattening regularly. Tip- I like to cook the burgers for a few minutes each side until they are brown, and then place them in a preheated oven of around 200 degrees Celsius for 10 minutes or until browned through. 

4. Serve the burgers with salsa and in the bread rolls, if desired.
