BEEF, FETA & HERB PIZZA


Last night (Friday night) I was craving pizza something terrible. Not generic, greasy fast food pizza, but homemade succulent pizza made with love. Hence came the idea for my beef, feta and herb pizza. Easy to make with barely any preparation time required (no extensive arduous chopping of vegetables) this pizza is perfect for a lazy Friday night in. Feel free to get imaginative with the toppings and add potato, sweet potato, pumpkin, chicken, or lamb as your base ingredient instead of beef. Just remember the golden rule when making pizza- less is ALWAYS more. 
Note- this pizza can easily become gluten free, by buying gluten-free pizza bases. 


INGREDIENTS

  • 2 x 30cm round store-bought pizza bases (wholemeal or gluten free)
  • 4 tablespoons tomato paste
  • 1 medium red capsicum (200g), thinly sliced
  • 500g lean beef mince
  • 1 medium brown onion (100-130g), finely chopped
  • 1 teaspoon olive oil
  • 2 garlic cloves, crushed
  • 2 teaspoons dried oregano
  • 1 teaspoon mixed herbs 
  • 75g reduced-fat feta, crumbled into small pieces
  • 1 x 400g tin of diced tomatoes
  • 30g reduced-fat grated cheese 
  • Optional- pizza stone 

COOKING 

1. Preheat oven to 200 degrees celsius fan force. 

2. Heat oil in a large frying pan over medium heat. Add brown onion and garlic and cook for 4 minutes or until onion is soft. Add mince and cook, stirring constantly with a spoon to break up lumps. Cook for 5 minutes or until mince has browned. Stir in diced tomatoes, mixed herbs and dried oregano and remove from heat. 

3. Spread 2 tablespoons of tomato paste evenly over both pizza bases. Spread beef mixture evenly over the two pizzas. Top both pizzas with capsicum, feta and grated cheese. 

4. Place pizzas on lined oven trays or on pizza stones. Cook in the oven for around 15 minutes or until the base of the pizzas are browned.
